4 simple sandwiches for weekend scrounging

Nothing says "weekend" like a quick, easy meal

Around my house, weekends tend to be the toughest days for answering the simple question, “What should we eat?” Seems counter-intuitive, I know. With more free time, we should be able to cook the most ambitious, most creative meals of the week.

But maybe because it’s our free time, “ambitious” and “creative” are usually the last things we’re looking for. Instead, we typically end up scrounging for quick and simple meals that won’t get in the way of our precious leisure time. Soup, salad or sandwich — that’s usually what I feel like on a Saturday or Sunday, and since it’s a cool, wet Sunday afternoon as I sit down to write this post, those are the recipes that keep jumping out at me.

Everyone knows how to make a peanut butter sandwich, but do you know the recipe for the peanut butter sandwich that Elvis reportedly preferred? Besides the main ingredient, this one also calls for banana, honey and fried bacon — oh, and it’s served hot. (Gastronomer’s Guide)

For something a little more grown-up, how about an egg, cornichon and dill sandwich? Stacie Billis describes this as “a deeply satisfying sandwich, with the rustic elegance of the French countryside” — not bad for something you decided to throw together at the last minute, right? (One Hungry Mama)

I don’t usually think of sandwiches as being “sophisticated,” but that’s about the only word that applies to this panini with radicchio, goat cheese, citrus oil and almond pesto. I know that sounds complicated, but Kelsey Banfield says total prep time is just 10 minutes — even if you make the pesto from scratch. (The Naptime Chef)

For instance, she suggests using avocado instead of mayonnaise, leaving your sandwich open-faced, or skipping the bread in favor of a whole wheat tortilla.
